3 Cheeses Avocado Tart w/ Turmeric Crust

Try to remember one day where you’ve felt super proud of you… yeah ? You have it ? Well, that’s how I felt when I made this avocado tart for my parents ! Hehehe ! This tart is an explosion of textures because the crust is crunchy and the feta & mozarella cheese make it creamy plus the avocado gives it a healthy and tasty touch. The crust is also homemade and vegan, you can use it for any other quiche or tart. I added some basil, pepper and olive oil on top and it turned out amazing. All the family loved it and they re-did it twice already… That made me really happy !

What is Inside ?
FOR THE CRUST
  • 300g whole spelt flour
  • 80g coconut oil
  • 100ml water
  • 2 tbsp turmeric powder (optional)
FOR THE FILLING
  • 2 avocados
  • 1 cucumber
  • 200g feta cheese
  • 1 mozarella
  • 200g ricotta cheese
  • 2 garlic cloves
  • salt & pepper
  • 4 basil leaves
How to Make it ?
FOR THE CRUST
  1. Melt the coconut oil and pre-heat your oven to 180ºc
  2. In a bowl put the flour & turmeric powder and add the coconut oil and mix until you see little balls
  3. Add the water slowly and form a ball
  4. Refrigerate it for 10 minutes
  5. Spread out the dough with your rolling pin and press it into a tart dish
  6. Bake it for 30-35 minutes and let cool down
FOR THE FILLING
  1. Cut your avocados & cucumber in thin strips
  2. In a big bowl mix the 3 cheeses with the garlic thinly chopped, salt and pepper (keep some feta to decortate)
  3. When the crust is at room temperature add the cheese mixture
  4. Start adding cucumber strips from the outside to the middle with the avocado strips
  5. Thinly chop the basil leaves and add then on top with a dash of olive oil and some feta cheese
