Raw-Vegan Strawberry & Ginger Energy Balls &/or Bites

Hello there !

I know, it’s been two cereal bars / energy balls recipes in a row… Sorry ! I really like them hehehe

PS: This recipe can be done without the food processor, just soak the dates in warm water for a few minutes, use little oatmeal or oatmeal flour and melt the coconut oil. Like that you will be able to mix everything with your hands.

What is Inside ?
  • 2 big strawberries
  • 2 tbsp almond meal
  • 20g sesame seeds
  • 20g pumpkin seeds
  • 30g flax seeds
  • 10 medjool dates
  • 100g oatmeal
  • 20g cacao en polvo
  • 80g coconut oil
  • 1 tbsp ground ginger
How to Make it ?

Without Food Processor:

  1. Pit and cut the dates into quarters, as well as the strawberries, set aside the strawberries and soak the dates in warm water for 15 minutes
  2. Mix all the dry ingredients in your bowl until well combined
  3. Make a purée with the soaked dates with your hands and add it to the mixture
  4. Melt the coconut oil and right away add all the wet ingredients and keep mixing with your hands until well combined
  5. Make balls or bites (I made both with this recipe) and refrigerate for 1 hour at least before eating

With Food Processor:

  1. Blend it all ! Hehehe… Okay there are some indications I´m kidding :p
  2. Put the dry ingredients and mix it all until it becomes flour
  3. Add the wet ingredients, dates and strawberries and keep mixing
  4. Once it looks like a compact mixture make the balls or bites and refrigerate 1 hour

Ps: If you would like you can melt some chocolate and dip them into it so it becomes a sort of a Bounty Snack with no Coconut inside ! You can also dip only half of it or just drizzle some melted chocolate so it directly turns into an awesome snack (see pictures) ! OR, even better… you can roll (They see me Rollin’) the balls into grated coconut or cacao powder so everybody will be crazy in love for them…
